Brown Sugar

Brown sugar is a sucrose sugar product with a distinctive brown color due to the presence of molasses. It is by tradition an unrefined or partially refined soft sugar consisting of sugar crystals with some residual molasses content (natural brown sugar), but is now often produced by the addition of molasses to refined white sugar (commercial brown sugar).

The Codex Alimentarius requires brown sugar to contain at least 88% sucrose plus invert sugar. Commercial brown sugar contains from 3.5% molasses (light brown sugar) to 6.5% molasses (dark brown sugar) based on its total Based on total weight, regular commercial brown sugar contains up to 10% molasses. The product is naturally moist from the hygroscopic nature of the molasses and is often labeled “soft.” The product may undergo processing to make it flow better for industrial handling. The addition of dyes or other chemicals may be permitted in some areas or for industrial products.

Particle size is variable but generally smaller than that of granulated white sugar. Products for industrial use (e.g., the industrial production of cakes) may be based on caster sugar, which has crystals of approximately 0.35 mm.

 

ICUMSA-45 WHITE REFINED SUGAR

ICUMSA 600-1200 BROWN CANE SUGAR

Raw Brown Cane sugar is brown sugar also known as ICUMSA 600-1200 which is produced after the first crystallization of sugar cane. Raw sugar is rougher than white sugar, and its colour is brownish. Based upon weight, raw brown sugar from sugar cane, when fully refined, yields contain about 70 percent white sugar. There are more molasses found in natural brown sugar that gives it a higher mineral gratified.

 

ICUMSA 150 Cane Sugar

ICUMSA-150 White Cane Sugar is widely used because it contains less chemical. It is more easily available, and it is a Lower Cost replacement to the traditional ICUMSA 45 White Refined Sugar. ICUMSA-150 White Cane Sugar is also called White Crystal Sugar which is formed by Crystallization process, without chemical refining. ICUMSA-150 White Cane Sugar is often used in Large Scale Baking, Drinks making and the production of other food stuffs.

In recent decades, Brazil has been among the largest sugar exporters and as one of the largest sugar cane producers in the world and, consequently, one of the main sugar producers, responsible for approximately 48% of the world exports of this commodity.

Brazilian sugar importers seek, among other qualities, Icumsa 150 sugar, the English acronym Icumsa (International Commission for Uniform Methods of Sugar Analysis) determines the purity and degree of whiteness, the greater the number linked to Icumsa, the less refined. For example, brown sugar, known on the market as brown sugar, is rated Icumsa 800 to 1600.
